ABOUT LITTLE ISOBEL
little isobel is a small company committed to the philosophy of buy fresh buy local. the main ingredient in all of our products comes from small near by farms, assuring a fresh product with as little environmental impact as possible. we use a special type of pectin that allows us to use very little sugar, while still preserving the freshness of our fruits and herbs, shying away from the overcooked or chemical flavor of most low sugar jams. even our jars come from a distributing company in Lancaster. we strive to create complex new flavors out of familiar, everyday fruits and herbs, bringing a touch of the exotic to what grows right in your backyard.

ABOUT OUR PECTIN
pectin is a naturally occurring jelling agent found in nearly every plant, but with particularly high concentrations in certain types of fruit. most pectin is derived from apples, but needs high concentrations of sugar in order to activate. at little isobel, we use type of citrus pectin that is activated by calcium. the calcium monophosphate used in our products is derived from a mineral source, not an animal source, and is the ingredient that allows us to make such a fresh, low sugar product.

ABOUT OUR FARMERS
here at little isobel, our herbs and fruits come from three major places.

GREEN MEADOWS: Green Meadows farm is located in Lancaster, PA. near the town of Gap. started in 1981 by Glenn Brendele, they focus on minimum impact farming borrowing methods from organic and sustainable practices, including heating greenhouses using waste vegetable oil from the customer restaurants, and controlling insect pests with IPM and soap/vegetable oil emulsions.

GREENSGROW: Greensgrow is small urban farm (the size of a city block) located in the Kensington area of Philadelphia. It was started in 1997 by Mary and Tom, and moved to Philadelphia in 1998. They work with family farms from New Jersey and Pennsylvania, providing organic and sustainable produce to us city folk. See their farmer profiles for more information.

OVERBROOK FARM: Overbrook Farm has been operating for 25 years. located in Lansdale, PA. and run by Paul Tsakos, they produce over 20 kinds of fresh herbs using a chemical-free growing method.
